the farm-to-cake philosophy

I believe that the best cakes start with fresh, whole ingredients. I use real butter, cane sugar, farm-fresh eggs, responsibly sourced chocolate, and pure extracts and flavorings. And of course, everything is made from scratch in small batches, including fruit fillings or jams and citrus curds. I use locally-grown, seasonal ingredients whenever possible for a true 'farm to cake' experience. I also believe in 'quality over quantity.' This allows me to give my clients—and their cakes—the time and attention they deserve.

the baker

"When I grow up, I want to be a candy maker!" As a child, this was the declaration I'd make to my parents while we twisted down Hwy 17 towards home after a day on the Santa Cruz pier.

In the salty ocean air, face pressed to the glass, I'd watch a deft chocolatier at Marini's Munchies dip bon-bons through endless swirls of tempered chocolate and lay each one on a marble slab to set. I was obsessed! One way or another, I always knew that food—particularly sweets—was bound to be a part of my life.

Years later, at the age of 25, I was given a dream opportunity to finally explore my culinary passions: a job on the line at the fine dining establishment Black Cat Bistro in Cambria, CA. This is where I met a friend with the same passion for all-things-food, and in 2010 we founded Just Baked SLO {now known as Just Baked Cake Studio & Bakery}. What began as a small cookie delivery venture grew into one of the top rated bakeries in the San Luis Obispo area.

In 2016, my family picked up and moved to West Sacramento, and I turned Just Baked over to the capable hands of a dear friend and fellow cake artist, Libby Ryan, and her amazing staff of bakers and decorators. I now work as a marketing specialist for an organic farm and produce delivery service, but my desire to bake amazing cakes is as strong as ever—there is nothing better than watching someone taste a scratch-baked treat, or see their wedding cake for the first time. It would be an honor to be a part of your special day!
